Playing Volleyball On Coronado Island, San Diego

After the workout, Jessica and I took Kyla and Bruno to a park on Coronado Island.

If you are not familiar with the geography of San Diego, we live in downtown San Diego.

To get from downtown San Diego to Coronado Island, you have to take the Coronado bridge.

Even though it’s only a 10 minute drive, it feels like it is a ways away since it’s very suburban.

Once we arrived at the park, Bruno and Kyla hung out watching all the other kids playing, while Jessica and I had a quick picnic with sandwiches.

Fun fact: you can actually see our condo building in downtown San Diego from Coronado Island.

While I was waiting for Jessica to finish her sandwich, I played solo volleyball by setting myself, spiking the ball, then running to retrieve the ball.

If you’re not very motivated to do cardio, this is how you make yourself do sprints.

Once Jessica was ready, we played pepper.

While we were playing, Kyla was checking her likes on Instagram.

Family Walk

After our picnic and volleyball we took a family walk on the boardwalk.

I was wearing Kyla in the babybjorn so you know I was doing the “dad strut”.

It was also cool to see other dad’s on tandem bikes with their kids.

I’m excited to do that with my kids someday.

Pan-Seared Salmon Recipe From Sunbasket

  • 1 fennel bulb
  • 1 tbsp avocado oil
  • 1/2 cup Diced Tomatoes
  • 1 cup vegetable broth
  • 1 tbsp pure maple syrup
  • 1/2 tsp dried oregano
  • 1/2 tsp marash chile flakes (optional)
  • 1 oz pitted kalamata olives
  • 1 1/2 tbsp capers
  • 2 6 oz salmon fillets (skin on wild Yukon River)
  • 4-5 sprigs fresh flat-leaf parsley
  • kosher salt
  • freshly ground black pepper

  • 1 fennel bulb
  • 1 tbsp avocado oil
  • 1/2 cup Diced Tomatoes
  • 1 cup vegetable broth
  • 1 tbsp pure maple syrup
  • 1/2 tsp dried oregano
  • 1/2 tsp marash chile flakes (optional)
  • 1 oz pitted kalamata olives
  • 1 1/2 tbsp capers
  • 2 6 oz salmon fillets (skin on wild Yukon River)
  • 4-5 sprigs fresh flat-leaf parsley
  • kosher salt
  • freshly ground black pepper
Pan-Seared Salmon With Fennel, Caper, And Olives
Instructions
  1. Cut the fennel lengthwise into quarters, cut away the core, then cut the quarters lengthwise into ÂĽ-inch thick slices.
  2. In a large frying pan over medium high heat, warm 1 tablespoon of avocado oil until hot, but not smoking.
  3. Add the fennel, season with black pepper and salt, then cook for 4 to 5 minutes per side, turning once, until tender and lightly browned.
  4. Add 1/2 cup of diced tomatoes, 1 cup of vegetable broth, 1 tbsp of maple syrup, 1/2 tsp of dried oregano, and as much Marash chile as you like.
  5. Bring to a boil, then reduce to a simmer and cook for 4-6 minutes, stirring occasionally, until the sauce has thickened.
  6. Stir in 1 oz of pitted kalamata olives and 1 1/2 tbsp of capers, then cook for approximately 1 minute, or until heated through.
  7. Remove the sauce from the heat.
  8. Pat the 2 6 oz salmon fillets dry with a paper towel, then season lightly with salt and pepper.
  9. Add the 2 6 oz salmon fillets, skin side down, to a large frying pan over medium high heat, and cook for 4-5 minutes, or until lightly browned on the bottom side, then turn and cook for another 2-4 minutes, or until the flesh is opaque and flaky.
  10. Strip the parsley leaves from the stems, then coarsely chop the leaves.
  11. Transfer the fennel and sauce to individual plates, top with the salmon and parsley leaves, then serve.

Taste Test

After taking a bite, my first impression was how delicious the maple syrup sauce was.

Jessica’s first impression, “Man, I love this.”

Kyla even took a bite of the salmon and agreed it tastes delicious.

This week Kyla has begun taking her first bites of protein.

She has had a couple bites of chicken, steak, and you have now just witnessed her first time having salmon.

This is another not boring meal.
