The peanut butter batch baked in a silicone cupcake pan and I added one almond to each cup. When they baked the tops split open looking very elegant. I waited for them to cool a bit and put just a dab of peanut butter in the opening, so they were kind of like surprise protein cupcakes. Mmmmm….

Made one batch with coffee and one batch substituting peanut butter for the coffee (cuz hubby hates coffee). Even my 20 yr. old son Loved Them. I took some to work for healthy eats during a very long shift… and I feel great!

i’ve only used stevia…but i’m sure maple syrup, raw honey, or apple sauce would work…you hate stevia? First person i’ve heard say that

Ooh, I think I’ll make this. Do you know how many calories/protein it has (per slice)?
2 squares would be approx 130 cals, 15g protein, 15g carbs, 1 g fat (rough guess)
