  • 3/4 cup oats
  • 1/4 cup oat bran (substitute option: 1/4 cup of ground flax seeds)
  • 6 Egg white (substitute option: 3 whole eggs)
  • 1 serving Chocolate Protein Powder
  • 1 tbsp instant coffee
  • 1 packet Stevia
  • 1/4 teaspoon baking powder
  • 1 tsp cacao powder
  • 2 diced apples
  • avocado oil cooking spray

  • 1 tbsp instant coffee

  • 1/4 teaspoon baking powder
  • 1 tsp cacao powder

Chocolate Mocha Protein Squares
Instructions
  1. Pre-heat oven to 350F.
  2. In a blender, add 3/4 cup of oats, 1/4 cup of oat bran (or ground flax seeds), 6 egg whites (or 3 whole eggs), 1 serving of chocolate protein powder, 1 tbsp instant coffee, 1 packet of stevia, 1/4 tsp of baking powder, and 1 tsp cacao powder. Blend until smooth.
  3. Pour the batter into a mixing bowl, then add the 2 diced apples, and stir together. How good does that batter look?
  4. You're almost done. Spray an 8x8" baking dish with avocado oil cooking spray, then add the batter so it evenly covers the baking dish.
  5. Once you're ready, put the batter in the pre-heated oven for 30 minutes. Keep checking throughout. Once the 30 minutes is up, remove them from the oven, let it cool, then cut into 8 squares.

  1. Oh, by the way… This was Awesome….

    The peanut butter batch baked in a silicone cupcake pan and I added one almond to each cup. When they baked the tops split open looking very elegant. I waited for them to cool a bit and put just a dab of peanut butter in the opening, so they were kind of like surprise protein cupcakes. Mmmmm….

    Made one batch with coffee and one batch substituting peanut butter for the coffee (cuz hubby hates coffee). Even my 20 yr. old son Loved Them. I took some to work for healthy eats during a very long shift… and I feel great!

    I can’t stand Stevia; have you made them with any other sweeteners (honey? applesauce?)
