Slice the zucchini into the same size as a traditional french fry. To do this, slice the zucchini in half, lengthwise, then slice it in half again, widthwise. Depending on how thick the zucchini is, you may have to slice it lengthwise a few more times, until it is the size of a french fry.
Dry the zucchini fries by dabbing them with a paper towel.
Add parchment paper to a baking sheet.
In a mixing dish, mix together 1 tbsp of Italian seasoning, 1/2 tsp red pepper flakes, 1/2 tsp pink Himalayan salt, and 1 tsp garlic powder.
In a separate bowl, whisk together 2 whole eggs.
Cover a zucchini fry in the egg batter, then coat with the almond flour batter.
Add to the coated zucchini fries, in a single layer, on top of the baking sheet.
Bake in the oven for 13 minutes, turn the zucchini fries, and bake for another 12 minutes.
