  • spray avocado oil spray (or use coconut oil)

Instructions
  1. The first thing to do is pre-heat your oven to 350F.
  2. In a mixing bowl, add 2 cups of unsweetened shredded coconut, 1/2 cup of almond flour, 1/4 cup of cacao nibs, a dash of sea salt, 2 tsp of pure vanilla extract, and 2 tbsp of melted coconut oil. This smells delicious. OPTIONAL: If you want to increase the protein content, you can also add chocolate protein powder to the mixture, if you like.
  3. Give it a quick stir to mix it up. Once it's slightly mixed up, slowly add in 1/2 a cup of pure maple syrup, making sure you spread it all around. Stir it well to blend all of the ingredients together. You will not believe how good and absolutely delicious this smells!
  4. OPTIONAL: add the mixture to a food processor and blend for 5-10 seconds. This will help bind all the ingredients so it sticks together better. At this point of the recipe, you can also form the mixture into macaroons and eat them raw. They taste absolutely incredible raw as well.
  5. Get your baking sheet out and grease it with avocado oil spray. You can also coat the baking sheet with coconut oil. Be sure to spread the oil all over the baking sheet because the macaroons will stick if you don't. Coconut oil is great for the skin, so rub any excess into your skin.
  6. Scoop a tbsp of the macaroon mixture into your hands and form it into a packed ball. Place it on the baking sheet and repeat. That's it.
  7. Put them in the oven, pre-heated at 350F, for 15-18 minutes, or until they are slightly browned. So keep an eye on them as they bake.
  8. Once the buzzer goes off, it's time to go. Remove them from the oven and let them cool down for 5-10 minutes. Enjoy.
