In a mixing bowl add 2 cups of unsweetened shredded coconut, 1/2 cup of almond flour, 1/4 cup cacao nibs, 2 tsp of vanilla extract, and 2 tbsp of melted coconut oil.
Mix it up to ensure all the ingredients are blended together.
Slowly add 1/2 cup of maple syrup to the mixture.
Mix it all together with your hands, then form into small macaroons.
Spray a baking dish with coconut oil spray.
Put the macaroons into the pre-heated 350F oven and bake for 15-18 minutes.
