Damn That’s Good Coconut Butternut Squash Soup

Ingredients
  • 1/2 butternut squash
  • 1 1/2cups canned coconut milk
  • 1/2tsp Cinnamon
  • 1/2cup Pecans
Instructions
  1. Peel the butternut squash, cut lengthwise, then scoop out the pulp and seeds.
  2. Cut the squash into small chunks, add to boiling water, then boil for approximately 7 minutes, or until soft.
  3. Drain the water, then add the boiled squash to the blender.
  4. Add 1/2 cup of canned coconut milk, and 1/2 tsp of cinnamon.
  5. Blend for 20-30 seconds, or until it reaches a thick and creamy consistency.
  6. Add 1/4of the coconut squash soap into a bowl, top with 2 tbsp of pecans, a dash of cinnamon, then drizzle with a little bit of coconut milk.
  7. Enjoy.
