Instructions
Add 1 tbsp of coconut oil to a large pot over medium heat.
Add 1 chopped onion and 1 cup of chopped fennel to the heated pot and saute in the coconut oil for 4-5 minutes.
Add 1/2 cup of white wine, 4 chopped garlic cloves, 1 cup of chicken broth, and 1 cup of diced tomatoes with the juice, to the pot.
Heat the saucy broth to a boil for approximately 2-5 minutes.
Once the broth is boiling, add 1 lbs of mussels, 8 oz of clams, 8 oz of cod, and 8 oz of scallops to the broth.
Stir it up, add salt and black pepper to taste, then cover the pot with a lid, and cook for 5-7 minutes, or until the shells begin to open.
Add the chowder to a bowl and top with a dash of fresh parsley (optional).
