Instructions
Heat 2 tsp of extra virgin olive oil over medium heat in a pan. Ensure the oil coats the entire pan.
Once the extra virgin olive oil is heated over medium heat, add 1/3 cup of diced onions to the pan, and saute for approximately 2 minutes, or until they are soft and smelling delicious.
Add a tbsp of water to the pan, cover with a lid, and allow to cook for approximately 8-9 minutes, or until the sweet potatoes become soft, and ready to eat. Rather than walking away for 8-9 minutes, make sure you are occasionally stirring and turning the sweet potatoes, so they don’t burn on one side. The bigger the sweet potato hash browns are, the longer they will take to cook.
Add some ground black pepper on top of the sweet potato hash browns, then you are done. Enjoy.
