On today’s episode of Live Lean TV, I’m showing you how to make a healthy sweet potato hash browns recipe that is delicious.

When you order eggs for breakfast at a diner, I’m sure you’ve had those greasy and salty potatoes, often called hash browns, that come on the side.

Although these hash browns may taste good, since they’re probably deep fried, greasy, and very salty, they’re not doing your physique any favors.

So on today’s edition of Brad’s Cookbook, I’m going to show you a healthier hash browns recipe using simple ingredients.

This sweet potato recipe will only take you 8 minutes.

How To Make A Healthy Sweet Potato Hash Browns Recipe

All you need for this healthy sweet potato recipe are:

Note: since we are using extra virgin olive oil, make sure you keep the temperature at medium heat, as you don’t want to cook olive oil over high heat. You can also swap out the extra virgin olive oil with avocado oil, since avocado oil is a better cooking oil, since it has a higher smoke point.

  • 2 tsp Extra virgin olive oil
  • 1/3 cup onion (diced)
  • 1/3 cup red bell pepper (diced)
  • 1 medium (approx. 200g) sweet potato (diced into small cubes)
  • 1 tbsp Water
  • To taste Black Pepper

  • 2 tsp Extra virgin olive oil
  • 1/3 cup onion (diced)
  • 1/3 cup red bell pepper (diced)
  • 1 medium (approx. 200g) sweet potato (diced into small cubes)
  • 1 tbsp Water
  • To taste Black Pepper
Sweet Potato Hash Browns
Instructions
  1. Heat 2 tsp of extra virgin olive oil over medium heat in a pan. Ensure the oil coats the entire pan.
  2. Once the extra virgin olive oil is heated over medium heat, add 1/3 cup of diced onions to the pan, and saute for approximately 2 minutes, or until they are soft and smelling delicious.
  3. When the onions are sautéed, add 1/3 cup of diced red bell pepper, and 1 sweet potato that is diced into small cubes.
  4. Add a tbsp of water to the pan, cover with a lid, and allow to cook for approximately 8-9 minutes, or until the sweet potatoes become soft, and ready to eat. Rather than walking away for 8-9 minutes, make sure you are occasionally stirring and turning the sweet potatoes, so they don't burn on one side. The bigger the sweet potato hash browns are, the longer they will take to cook.
  5. Add some ground black pepper on top of the sweet potato hash browns, then you are done. Enjoy.

  1. Hey Brad! Love the idea for the Sweet Potatoe ‘Hashies’! It’s great you made something I can totally dig! In fact I am going to cook it for some special guests we are having this weekend. It seems perfect for any meal of the day. Just one question: Are the quantities you provide meant for one person? The best thing about cooking something ‘badly enough’ is you get to have another go! LOL
